You can either cook this soup on the stovetop or place all ingredients in the crock pot. You will need to prepare 1 day early by soaking a small package of black beans overnight in water.
Rinse beans place in container – the ones you soaked overnight!
32 ounces of Chicken broth or Vegetable broth
2 Carrots (diced)
2 Celery (chopped)
1 small onion (chopped)
1 teaspoon garlic (minced)
1 tablespoon of adobe sauce from Chipotle peppers, – if you like your soup spicy add a chopped chipotle pepper!
1 tablespoon Chili Powder
1 teaspoon Cumin
1 Bay leaf
I served this over Brown rice!
