Chinese Cabbage Salad

About This Recipe

“This is a quick, healthy, fresh and easy recipe to prepare. Parsley is high in Vitamin A and Iron and aids in healthy digestion.”

o 5 cups Chinese cabbage, shredded
o 1 1/4 cups chopped pineapple ( drained, juice reserved)
o 2 1/2 cups fresh parsley, roughly chopped
o 1 1/4 cups shredded carrots
o 5/8 red onions, thinly sliced
o 1/3 cup mayonnaise
o 5 tablespoons reserved pineapple juice
o 1 1/4 tablespoons whole grain mustard
o 1 1/4 tablespoons ginger, grated
o 1 1/4 to taste salt & freshly ground black pepper, to taste


1. In a large zip-lock bag combine cabbage, parsley, pineapple, shredded carrot and thinly sliced red onion; seal and chill.
2. Combine mayonnaise, whole grain mustard, ginger, pineapple juice and salt and freshly ground black pepper to taste; cover and chill.
3. Just before serving, pour dressing in with the zip-lock bag mixture and fumble/toss to coat.
4. serve and enjoy!
