3 cloves of garlic

1 Tbsp ginger

2 bunches cilantro

1/2 cup fresh lime juice

1 1/2 tsp wine vinegar or ACV

3/4 tsp ground cumin

3/4 cup olive oil

salt and pepper to taste

Blend in food processor. Process the cilantro with garlic and ginger, add vinegar and lime juice, then slowly add oil.  You can play around with the amounts to achieve your acid level.
