I tried this recipe today.   A simple recipe I think I will make it again.


3/4 cup coconut flour

1/4 cup fresh whole butter melted

1 dash salt

Coconut Custard:

4 large eggs

2 tsp vanilla

1 tsp coconut extract

¼ cup honey

1 tbsp. arrow root

1 can unsweetened coconut milk

¾ cup unsweetened coconut flakes


Mix the flour, coconut, salt and melted butter.  Press the mixture into a 9 inch pie pan, push it up into the side of pan.  It will be a nice compact crust and it will cover the entire bottom and side of pie pan.


Beat eggs, vanilla, coconut extract, honey. Constantly stir over medium heat, milk and arrowroot until it begins to thicken. Slowly drizzle milk mixture into egg mixture. Pour into prepared crust and sprinkle coconut flakes. Bake for 35-45 minutes. Cool and serve.
