Soup – Hyatt Hill Country Resort Red Lentil Chili

Hyatt Hill Country Resort Red Lentil Chili



2 carrots
1 medium zucchini
1 medium yellow squash
1/4 cup onion
1 teaspoon olive oil
1 cup dry red lentils
2 cups chicken stock or water
1 small bay leaf
1 1/2 teaspoons dried oregano
1/2 teaspoon cayenne
1/2 teaspoon nutmeg
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/2 teaspoon finely chopped garlic
1/2 jalape�o, finely diced, or to taste 1 (32-ounce) can plum
tomatoes (with juice), coarsely chopped
Salt, to taste
Pepper, to taste

8 corn tortillas
Cooking oil in a spray bottle
8 teaspoons nonfat yogurt
Cilantro leaves

Put carrot, zucchini, squash and onion in bowl of food processor;
pulse on and off to chop fine. In a saucepan, heat olive oil over
moderate heat, add chopped vegetables and cook for 5 minutes,
stirring occasionally. Add lentils, chicken stock, bay leaf, oregano,
cayenne, nutmeg, chili powder, cumin, garlic, jalape�o and tomatoes.

Cover partially and simmer gently, stirring often, for 2 hours, or
until lentils are tender. Add a little water if the liquid has been
absorbed before the lentils are cooked. Season to taste with salt and
pepper. Cut tortillas into quarters, spray with cooking oil, place on
baking sheet and bake at 325 degrees until crisp. Serve chili in warm
bowls and garnish each with 1 teaspoon yogurt, 4 chips and cilantro.

Makes 2 quarts or 8 (1-cup) servings.
