Veggie Spaghetti

2 ozs Pasta (I use spaghetti and break it up in small pieces before I put it in boiling water).  Any type of Pasta works.  I use Rice Pasta for Gluten Free diet.

1/2 cup Red Bell Pepper

1/2 cup English Cucumber

1/2 cup Grape Tomatoes

1/2 cup Carrots

1/4 cup green onions

1/2 cup Garbanzo Beans

2 parts extra virgin Olive Oil to 1 part Balsamic Vinegar


Mix and let sit in the refrigerator to marinate for a short time.

Serving size 1 – add 1/2 cup for each serving made.
